The banner "Paul's Kitchen" should be distinctive and recognizable from a distance. The name will be on the exterior of the restaurant. I would like "PK" on the pocket of a chefs coat with utensils in the pocket. EX: Knife, spatula, whisk next to the banner, above or below.
